One of the things I love about working at home is that I can cook lunch. Today, I made and devoured this BLT made with:
- Flax Seed bread made with organic sprouted whole grains by Alvarado Street Bakery, a local SF Bay area Co-Op company. Two slices come in at 100 calories which makes me excited. These folks make all kinds of yummy things particularly for those with unique dietary needs like yours truly.
- Black Forest Bacon from Whole Foods meat department. The bacon was on sale which was a bonus!
- Sauteed onions in the bacon juices.
- Sliced cluster tomatoes. For some reason, I'm really drawn to buying tomatoes that have some vine still attached to it. Yeah, the marketing person in me is totally sucked in.
- Mixed greens with arugula thrown in. Had leftover greens from salad the night before. Arugula adds a nice peppery flavor plus you get green goodness. It's a 2-for-1 bennie.
- Brianna's Poppyseed dressing. To me, this dressing is tastier than mayo.
So what are some unique ways you make a BLT?
