I'll be honest in that I have not cooked with fennel much but I am highly fascinated with the taste of this veggie because the anise flavor reminds me of licorice - a food I associate with fond memories of going to the movies which is always fun!
I don't care for celery, and in making stock, I've used fennel instead of celery and I like the taste better...mostly because it's atypical in stock.
