To add some fiery excitement to my daily green salads, I've started adding chopped jalapeno. I call them my little rings of fire on greens.
In this salad is a bed of organic arugula, with chopped avocado, peaches, red onion, shaved zucchini and slices of jalapeno. I got most of the ingredients from the farmers market. Play around with the fruit. The jalapeno goes really well with the cool sweetness of summer fruit like peaches, plums or nectarines.
To add some protein, toss on some almond slivers or pistachios.
