One of my favorite summer salads is cucumber with tomatoes because it's light, easy to make, and cooling when the weather gets hot.
I went to the Ferry Building farmers market and was excited to see that heirloom tomatoes are in full swing. I LOVE, LOVE heirloom tomatoes with all their unique colors, shapes, and textures. And the taste, well let's just say, I never knew a tomato could taste so delicious. You will never look at beefsteak tomatoes the same way again after having heirlooms.
To have fun with my salad, I used these cool heirloom gem-sized tomatoes called Red Zebra because they have stripes like a zebra. I also added some yellow and flame heirloom tomatoes. I love the gem-sized tomatoes, slightly bigger than cherry tomatoes and smaller than regular sized.
Armenian cucumbers are cool because they taste sweeter than regular cucumbers and have fewer seeds. In fact, Armenian cucumbers are a variety of burpless cucumber meaning they have thinner skin and are less bitter and apparently easier on the digestive system.
I also love the purple red of Spring onions, so festive. I chopped up some Spring onions with regular red onion to add an onion punch of flavor.
Go to your local farmers market and see what fun cucumbers and tomatoes you can find. The recipe is easy.
Ingredients (serves 3-4):
- 1 cup peeled and sliced cucumber
- 1 cup cut heirloom tomatoes
- 2 chopped Spring onions or green onions
- 1/4 cup chopped red onion
- Dill to taste
- 1/2 cup of your favorite vinaigrette
- A sprinkle of hemp seeds for topping to add a little protein (optional)
Put all the ingredients in a bowl. Pour in the vinaigrette and massge the dressing into the vegetables with your hands until all is covered with dressing.
