Most people only eat scrambled eggs for breakfast, but I like to sometimes eat them for an afternoon snack because eggs are a good source of protein. My naturopathic doctor is having me eat some kind of protein every two hours to help me with my wild night time sugar cravings. Apparently, the sugar cravings are caused by a big drop in my blood sugar, so thus the body reacts with the sugar cravings. Eating proteins will help curb curb that, and it has.
The challenge for me is coming up with ideas for protein sources because I don't like to eat the same thing over and over. This is how the scrambled eggs for afternoon siesta came up. Here I threw in some fresh tomatoes, onions, and spinach. It was dee-lish! I like my eggs on the over cooked side with some crunchy bits which is probably killing most of the good stuff but for the life of me I cannot stomach runny or soft mushy eggs.
