At the San Francisco Ferry Farmer's Market and Berkeley Farmer's Market (both) on Saturdays, one of the vendors selling their goods is Fatted Calf an artisanal charcuterie. For those of you who wonder what a charcuterie is (I didn't know either), it's a French word for a store that has an expertise in pork products like hams, sausages, and pâtés. Fatted Calf also sells select products made of beef, lamb, duck, hens, and quail.
In this picture, is a batch of their Beef Jerky made from grass fed beef, bourbon, organic blackstrap molasses and sea salt. I loved how they packaged their jerky. If you have never eaten grass fed beef, you must. There is definitely a difference in taste and the meat is more tender. This jerky for example is easy to bite into unlike most jerkys, and because they use organic ingredients, you get more of the meat taste.
Fatted Calf also sells their meats at the The Oxbow Public Market in Napa. The meats they use are supplied by local farms, are organic and hormone-free, and they use natural salts and seasonings, and organic herbs and produce. So yummy!
