I'm so excited that grocery stores are starting to sell more half roasted chickens because as a single person, half a chicken can go a long way. However, I always end up with left overs and chicken left overs can make for some wonderful nosh bites. Here's some ideas:
- Rip some of the chicken into little bits and make chicken salad with some organic mayo, some green onions, some walnuts, and a pinch of garlic salt. I like to use the garlic salt over the powder because the salt will add a bit more punch. If you're feeling adventurous and like a little sweet kick, add some sweet relish. I do this with my tuna, and it's equally good in chicken salad.
- Rip some chicken bits and make a chicken and Gouda cheese quesadilla. Go light on the cheese to save on fat and calories. I like Gouda cheese because it has a nutty taste to it. Plus, it's a different cheese to try out on a quesadilla. If you're a cheddar and onion fan, try Cotswold Cheese, it's one of my faves. Cotswold also tastes really yummy with tomato or cucumber. - Eat a cold chicken leg for an afternoon protein snack. If you're having troubles with intense sugar cravings in the afternoons, it could be your blood sugar is crashing. Instead of reaching for a cookie eat some protein. The protein will help stabilize the blood sugar imbalance in a far healthier way than the cookie or sweet. I'm a huge fan of cold chicken with a dash of garlic or seasoning salt. It's simple!
- Here's a simple chicken rice soup to make. Put into a pan and heat up some chicken stock from a can or box, along with some pieces of your chicken leftovers, a handful of cooked rice (left overs from another meal), some small pieces of ginger to your liking, and then some dashes of garlic salt and pepper to taste. If you get salted chicken stock, taste your soup first before adding more seasoning. Sometimes, to add veggies, I'll also throw in peas or slices of zucchini or yellow squash.
