Happy Cinco de Mayo! For the next 7 days, I'm going gluten free vegan for my "Great Food Reboot Experiment", but that doesn't mean there aren't a bunch of Mexican themed delights that can't be enjoyed like Margaritas which is basically salt, booze, and lime. Here are some other vegan friendly eats you can enjoy this Cinco de Mayo:
- Corn tortilla chips
- Plantain Chips [About.com]
- Guacamole
- Veg Tortilla Soup. Just eliminate the cheese to make it vegan. [All Recipes]
- Tomatilla Salsa Verde [Back in Skinny Jeans]
- Chile Rellenos stuffed with brown rice [Vegan Food]
- Churros. This is not a gluten-free recipe but you could try and replace the wheat flour with a gluten free flour. I haven't tried it, but if you have let me know. [Vegan Mexican Food]
- Horchata - rice based [Food Network]
- Raw friendly non-alcoholic Mojo-Jito made with kombucha and agave from G Living in the video below. Mojitos are actually Cuban but it's my fave drink so why not!
