If I had to come up with my idea of a perfect cafe/restaurant, Mugs Coffee Lounge in Fort Collins, Colorado would be a model. Heading into Colorado, coming into the last leg of the road trip with Jen, we had lunch at the fabulous Mugs, and oh yes my noshers, this place is a must.
So why do I think Mugs is close to utter perfection?
- The menu contains: gluten-free breads, veggie "meats", plenty-o vegan choices, organic, local foods, and rice milk for shakes & coffee drinks. I squee when I see rice milk on a menu!
- There are regular protein meats on the menu like salmon, ham, and bacon for the omnivores.
- Mugs grows some of the veggies they use in their dishes in their own indoor garden which is in the basement of the cafe.
- Right when you walk in, you see a clear sign of their mission statement which I think is really cool. I dig people who stand for something good.
- WiFi and art: The blogger and creative in me LOVES to be surrounded by creature comforts.
I got excited that I could get a veggie pita and then have turkey thrown on top. I ordered this pizza looking Veggie Sympathizer which has spicy eggplant spread, olive tapenade, hummus with organic spinach and sprouts. There is some parmesan on top, and since it was a small amount, it didn't trigger too much of the milk allergy. Living on the edge here.
I can't tell you how excited that makes me feel to be able to throw turkey on top of a vegetarian sandwich. And best! The pita is gluten-free.
Jen ordered this gluten-free Humm-dinger which is Pesto-cheddar pitas with organic cucumbers along with homemade hummus, olive tapenade, and guacamole. And yes, this dish was a hot mess of deliciousness as it looks.
And to compliment Jen's Humm-dinger, here's a simple lovely organic side salad with greens, cucumbers, tomatoes, sprouts, and onions.
And to wrap up the meal, we both got Chai lattes made with rice milk. {doing the cabbage patch}
