I eat a green salad almost everyday especially since I discovered arugula. Ice burg lettuce depresses me because I associate it with my "dieting" days where basically foods were bland and boring.
When I go to Whole Foods, I go to the bulk greens section and combine loose mixed greens with arugula and spinach. You get all kinds of greens covered in this mix.
The next challenge is to dress the greens because who wants to eat just a plate of greens. I had some kiwi in the fridge so I thought I'd cut some into chunks and throw it on top of my salad, and combined with the avocado and arugula, it's a really nice combo. You get a sweet peppery experience.
I also go to the salad bar and throw a bunch of things in a box to throw on top of my greens. I usually get: shredded beets, carrots, and jicama (if available), tomatoes, corn, edamame, hearts of palm, and this cucumber with dill, and a chickpea barley salad Whole Foods makes.
For dressing on this salad, I used Drew's All Natural Rosemary Balsamic which by the way makes for a great marinade for chicken and fish.
Kiwi on green salad is a winner!
