There are very few things I dislike food wise, and cilantro is one of them. My disenchantment with cilantro started back in the mid-90's after a horrid night of way, way too much tequila, guacamole, and something with fish and cilantro all over it. That began my mental association of cilantro = praying to the porcelain god.
Because I don't care for cilantro that much, I even came up with a Mojito guacamole that uses mint instead of cilantro. If I may say, the guac truly is deelish and festive without the cilantro, and is yummy coupled cassava chips.
But lately, for some reason, I've been willing to give cilantro another chance kind of like that friend you parted ways with because of a falling out over something that seems so insignificant now. There are several health benefits to eating cilantro like it's a powerful natural cleansing agent.
When I saw this cilantro, pumpkin seed pesto at Whole Foods it just looked really appetizing to me, so I got it and mixed it up with some rigatoni. I loved it! The pesto needed some added salt, but overall, it was a nice warm dinner that took less than 10 minutes to make mostly because of boiling time for the pasta.
The cilantro, pumpkin seed pesto also contained evoo, parsley, roasted garlic, sea salt and black pepper. There was plenty of garlic in the pesto as that is the aroma that dominates. But garlic is goodness, so I don't mind.
Okay cilantro, so far this renewed relationship is going good so far. Anyone got any cilantro suggestions for moi?
