I had one of those days where money was tight and I just had to make up something with whatever was in the fridge. Luckily, I had some frozen shrimp left over from the Garlic Shrimp and Lemony Kale with Shallots on Top of Quinoa recipe, a slice of bacon, and a head of garlic.
Not only was this dish tasty, it's got to be one of the easiest things to make. Took me maybe 5-10 minutes tops.
Ingredients (serves two):
- 12 medium size frozen shrimp, thawed
- 1 slice of black forest bacon cut into bite size pieces (or whatever bacon you have on hand)
- 3 cloves of garlic minced
- Olive oil
Let's Get Cooking:
- Heat a skillet to medium heat, and cook the bacon bites until they start looking cooked and you see some of the bacon oil start to appear in the pan. You don't want the bacon crispy yet because they will be in the pan longer so there will be plenty of time to get crisp if you like.
- Pour in just a little olive oil like two tsps. The oil will help cook the garlic and shrimp. Toss in the garlic and saute with the bacon until the garlic is soft. Your kitchen will start to smell heavenly.
- Toss in the shrimp and mix together with the bacon and garlic. Cook until the shrimp are a dark pink.
Voila! You're done. I threw my bacon garlic shrimp on top of some cooked Quinoa.
