Since we're knee deep into holiday eating and heading into New Year's resolution time of year when many people vow to lose weight, I thought I'd start sharing some ideas for a healthy lunch to help inspire better choices. On Twitter, look for the hashtag #healthylunch.
One thing that helped me in dropping 40lbs and keeping it off for three years now is eating a healthy lunch. I found that if I ate a lunch that made me feel good and energized, it helped me snack better in the afternoon and then eat a better dinner. Perhaps, it's one of those cause and effect things...you feel good and then want to keep the momentum going as long as possible.
I love butternut squash! For lunch the other day at True Food Kitchen, I ate these mini tacos (the tortilla was about 3" in diameter) which had grilled butternut squash, Portobello mushroom, avocado, fresh tomato salsa and a side of zesty Anasazi beans...there was some heat in the beans but not too much.
These tacos were vegan. To make the dish vegetarian, you could add some Cotija cheese or goat cheese. Eating tacos like this is also great for those of you who do...or want to try...Meatless Mondays.
