Whenever I have one of those weekends when I completely over do it with the food and booze sort of like I did this weekend because I partied with friends, I like to do a kinda detoxy thing on the Monday after and eat foods that are bursting with nutrients. I guess it's a way of making up for the decadence.
For our Meatless Monday healthy lunch idea, one of my detoxy type lunches is cucumber avocado rolls which you can find in most to-go sushi counters at a grocery store combined with a large fresh squeezed juice of beets, carrots, spinach, and cucumber.
I do the veggie juice to get as much green power as possible with less sugar. The carrots are really sweet on their own so you don't need to add in a fruit in the juice like apple to make the juice sweeter. Why add more sugars?
The veggie sushi is nice too because with the seaweed you get a nice source of minerals.
