Back when I worked in start-ups in Silicon Valley we used to eat Pho soup quite often because it was cheap. You could get a large bowl of soup for like $4 which would keep you filled up until a late dinner.
I think Pho soup is healthy because it's simple, low in fat and basically just broth, boiled chicken or beef, and rice noodles garnished with cilantro, onions, sprouts, and fresh basil. In some places, you can also get a lemon/lime sauce to dip your chicken in. Pho soup is also dairy and gluten free.
During the winter months, Pho is very comforting indeed!
