Beets are one of my top 5 favorite vegetables...and I'm talking fresh beets here, not that stringy kind drenched in juice you find in a can. If that canned version of beets is the only version you have ever experienced and dislike beets because of it, I implore you to try fresh beets. The two experiences are completely different.

Fresh beets also come in different colors besides red like candy cane, and yellow like this organic beet terrine, with almonds, fresh orange, and fennel pollen at one of my go-to places here in Phoenix, Calistro Bistro. The designer in me loves how they cut the beets into triangles.
