One of my favorite weekend lunches is making a veggie burger bowl. Using an edible vegetable bowl versus a bun makes the veggie burger experience gluten-free, vegan, and lower calorie.
Recently, I found some vivacious purple red cabbage at the grocery store to use as the bowl. I love all the lively colors in this bowl! Talk about vibrant noshing.
