I used to associate carrots as a diet food especially Baby Carrots. Anything deemed "diet food" in book typically means it is void of any kind of tast or pleasure, so I would avoid it.
My entire perspective on carrots changed one day at a farmer's market when I discovered heirloom carrots. First, I had no idea that carrots even came in other colors other than orange. My favorite color of heirloom carrots are purple, and as we know, I love to roast carrots as well. In fact, purple and white are the original color of carrots.
