Because of my dairy and egg allergies, one of the dips I miss most is classic Spinach Dip with gooey mayo and sour cream, water chestnuts, onion soup mix, and frozen spinach.
Well, no more! I have figured out a way to make a vegan version of my favorite spinach dip, and even for me, I cannot believe this dip is vegan. I had a friend try it, and he was surprised it was vegan too. We inhaled the whole bowl!
The bonus is that this recipe is easy to make. The only hard part is thawing the frozen spinach. I shopped at Whole Foods for the ingredients for this recipe. I like the Whole Foods 365 brand frozen cut spinach because you can get a big 16oz bag of spinach for under $2. Such a deal.
The KEY ingredient
The key to this recipe is using Follow Your Heart Roasted Garlic Vegenaise. I've tried all kinds of other vegan mayos, and dips usually come out tasting like you are substituting. I first tried the Roasted Garlic Vegenaise at the Fancy Food Show that was just here in SF, and I was blown away by how good this vegan mayo is - really incredible taste and texture. It's so creamy! Meat eaters will like it.
This recipe includes 1/4 cup of Follow Your Heart Vegan Gourmet Sour Cream as well. You don't have to use the sour cream. You can make this entire recipe out of the Roast Garlic Vegenaise especially if you LOVE garlic flavor. It was too much garlic for me, so adding some of the sour cream helps mellow out the garlic.
Besides being vegan, this recipe is also gluten-free, nut-free, GMO-free, and soy-free if you only use the garlic vegenaise. The sour cream has some GMO-free soy in it.
The chips in the photo are Simply Sprouted Way Better Snacks Brand Black Bean Tortilla Chips. I love these chips because they use sporuted grains and there is flax and quinoa in the chips. Plus, the chips are gluten-free, GMO-free, vegan, and soy-free.
Ingredients (makes 2 cups of dip)
- 1 - 16oz bag of Whole Foods 365 brand frozen spinach.
- 1 packet Simply Organic French Onion Dip Mix
- 1 cup Follow Your Heart Roasted Garlic Vegenaise
- 1/4 cup Follow Your Heart Gourmet Sour Cream
- 1/2 cup chopped water chestnuts
The night before, put the bag of the frozen spinach in the fridge and let it thaw overnight. You can microwave the spinach to thaw, but the dip tastes better when the spinach is naturally thawed.
In a large mixing bowl, put in the thawed spinach, the vegenaise, sour cream, and onion soup mix, and mix well.
Fold in the chopped water chestnuts and mix well again.
Chill the dip in the fridge for at least 20 minutes before serving and enjoy!
