Watermelon radishes are so pretty! The first of my three Watermelon radish salad creations is this Radish Carpaccio with two different watermelon radishes, and regular red radish sprinkled with chopped red onions and micro-greens I got at Trader Joe's.
Watermelon Radishes are beautiful and their inside coloring makes me happy because you never know what you'll see, and the colors remind me of Mother Nature as an artist. I love how Watermelon radish adds crunch and fun.
The second salad is another carpaccio-style salad this time with Watermelon radish and an orange Heirloom tomato again sprinkled with chopped red onion and micro greens. The sweet of the heirloom with the slight bitter of the crisp radish is quite lovely. I poured a little olive oil and sea salt on for more flavor boosting.
And lastly, I took the Watermelon-Heirloom carpaccio salad, chopped it up a bit, and added some chopped avocado, green garbanzo beans and hemp seeds, then topped all the ingredients on a bed of arugula.
Watermelon radishes are available year round and are in peak season in Spring and late Fall. If you want to add a splash of color and crunch to any dish, try out Watermelon radishes. They are so good!
