My date took me to a vegan restaurant in Berkeley, Herbivore The Earthy Grill, and he ordered the Ginger Ramen Noodle Soup. He let me try it (followed by a few other spoonfuls because I couldn't help myself) and wow! I was blown away by how amazing this soup was. I really loved that there was kale in the soup. The broth was incredibly savory and made my insides feel warm and cuddly.
The ramen is made with molokhia which gives it the green color. Molokhia is rich in betacarotene, iron, Calcium, Vitamin C, and more than 32 vitamin and minerals and trace elements.
I was so in love with this soup, I went back the next day and ordered one for myself. I also got the roasted red beets quinoa salad and that too rocked my world. My parents tried the ginger ramen soup as well, and they enjoyed it. They had no clue it was vegan. That's how good this soup is!
