This dish has got to be one of my favorite vegan dinners. I've posted about it several times before. The dish would be gluten-free if I could find a pre-made peanut sauce that uses gluten-free soy sauce. You can always make a gluten-free peanut sauce from scratch.
The noodles are gluten-free Trader Joe's brown rice spaghetti. The tofu is Trader Joe's Organic Super-firm high-protein tofu which has 14g of protein per serving which is cool, and organic means the tofu is also GMO-free. I just cubed the tofu and pan fried it in a little olive oil until crispy.
For topping, I put cashews, green onions, shredded carrot and a pinch of hemp seeds. The cashews and hemp seeds add more protein.
Besides being delicious, this dish takes about 10-15 minutes to make. The time is mostly spent boiling the noodles. Here's my recipe.
