I took your standard fried rice to a new fun level with this creation. This dish is tasty and is real fast to cook!
Ever since I went to Chipotle to try their new Sofritas vegan option, I've been exploring more of Hodo Soy's GMO-free tofu products. I got a tub of their Five-Spice Nuggets and the flavor and texture of this tofu is incredible. People who are not fans of tofu but are willing to give it another try just might dig these nuggets. I LOVED these nuggets! Hodo Soy uses gluten-free tamari in these nuggets.
For my fried rice (about 2 cups of cooked rice), I chopped up some of the Five-Spice nuggets along with chunks of Beyond Meat vegan chicken.
In a wok with 2 tbsp of olive oil, I sauteed some organic chopped onions until they got soft, then tossed in organic chopped carrots, peas, edamame, and corn I got at the Whole Foods salad bar. Mix those ingredients around for about a minute and then toss in cooked brown Jasmine rice with gluten-free tamari, sea salt and garlic powder.
I used 1 tbsp of gluten-free tamari with some sea salt and garlic powder to taste. I use very little tamari to lower the sodium plus I think fried rice tastes better with less tamari or soy-sauce.
I love white Jasmine rice and was thrilled to discover that there is a brown rice version. I like the texture of brown Jasmine so much better than regular brown rice. My local Whole Foods has the brown Jasmine in their bulk foods section.
I enjoyed this fried so much, I made another batch 3-days later.
