One thing I've been liking about Costco lately is that I am seeing more organic foods, and more foods that I would eat like this Sweet Kale Salad Mix made by Eat Smart brand. For bagged salad, this Sweet Kale mix is yummy and pretty looking.
The salad mix has shredded broccoli, shaved brussels sprouts, shopped cabbage, curly kale, chicory, and a packet of pumpkin seeds with dried cranberries. The mix does come with a poppy seed dressing but it's got egg and xanthan gum in it so I use my own dressings.
I love mixing the Sweet Kale salad mix with other fixings to create other fun salads. One of my favorite combos is this salad which has the Sweet Kale mix with some Trader Joe's bagged organic Tuscan kale salad, shredded heirloom carrots, chopped tomato, avocado, and sprinkles of hemp seeds with a blush vinaigrette.
