I noticed a new vegan Strawberry coconut milk ice cream at Trader Joe's and tried it out. Oh yes, we have a winner.
To make my scoop fun, I mixed in some almond slivers, a couple fresh raspberries and some crumbled some vegan, gluten-free Coconut Crunch cookie made by Grindstone Bakery, I found at Whole Foods.
Grindstone is an amazing baker here in Northern California. They make several gluten-free, vegan breads. Their bread is truly some of the best I've tried. More on Grindstone later.
Now that Spring is here, it's nice to enjoy fresh berries onto ice cream.
