This weekend I participated in the first Food Hackathon in San Francisco. One of my favorite foods during the event were these self-made vegan, gluten-free sushi tacos.
How clever to use large pieces of Nori as the taco shells. Seaweed is packed with minerals and a nice plant-based source of B12 for vegans. The filling was brown rice, two kinds of mushrooms, shaved carrots, and green onions. There was a creamy sauce as well but it had dairy in it. The tacos were so flavorful, I didn't miss any sauce.
To go with the sushi tacos was a side of sesame, cucumber ribbon salad. How pretty does that look? I went back for seconds.
