Now, roasted purple carrots, here is something that will make your palate dance. Ok, maybe not Gangnam Style, but you'll definitely Instagram this.
Heirloom carrots come in all different colors, and you are most likely to find these beautiful creatures at your local farmers market. Purple is my favorite color food, and I think it's cool that with these carrots you get the purple on the outside but the inside is still a shade of orange.
To roast the carrots, cut them down the middle, on a baking sheet, coat the carrots with olive oil. Sprinkle on a couple pinches of sea salt, and bake in the oven at 400 degrees for 20 minutes. Cool and serve on a bed of fresh arugula!
