Recently at Whole Foods, I discovered Mi Rancho Organic Corn Taco Slider Tortillas. They are 4" in diameter and are the cutest things. I've been on a taco slider creative binge lately. For brunch, imagine all the creative fun taco sliders you could make. The kids will LOVE these sliders!
When you are plant-based it is challenging to find breakfast and brunch foods that don't have eggs, cheese, or meats in them. The egg salad bacon taco sliders I've made above are actually entirely plant-based - yes, even the bacon.
You could easily use your own real egg salad recipe and real bacon. I wanted to show a fun plant-based version.
Here's what I used in my brunch taco sliders:
- Hodo Soy v-EGG-an Salad which is made with organic tofu making it GMO-free as well. Better yet, this egg salad has 13g of protein per serving. Hodo's egg salad is one of the best vegan egg salads I've ever tried.
- Turtle Island Foods Tempeh Smoky Maple Bacon made with organic soybeans. It's not gluten-free because it has soy sauce in the ingredients. Like the Hodo Soy egg salad, this bacon is packed with protein at 12g per serving. I've been wanting to try this vegan for a long time, and finally bought some. For vegan bacon, it's pretty tasty and better if you fry it in a little olive oil. I also used the bacon in this BLT Pink Bean Salad.
- Chopped ripe vine tomato
- Arugula
- Chopped Green Onions
- Hot sauce
