One of my favorite summer fruits is grapes which chopped up make for a fun sweet topping for any leafy green salad. You could also do red grapes for even sweeter goodness.
In my bowl along with the grapes, I mixed together kale, arugula, shaved Brussels sprouts, chopped beets, chopped carrots and zucchini, edamame, corn, quinoa, and walnuts. Most of the toppings I just got from the Whole Foods salad bar. Easy!
