When I made this sandwich, I honestly had to stand back and just stare at it for a few minutes because it just looks so pretty.
Normally, bacon is the star in a BLT, but in this creation the heirloom tomatoes steal the spotlight. I used yellow and dark red heirloom tomatoes and cut them thick to show off more of their vibrant colors. You could easily make a vegan version of this sandwich using tempeh bacon. And instead of L, I went A for arugula because I love the flavor of arugula and it is packed with more nutrients than lettuce.
I also found this new (new to me) organic, vegan, sprouted Lentil Grain bread from One Degree Organics which looked really cool so I decided to try it out. Not only did I really enjoy this bread my dad who is a die hard meatavore also really liked it. I buy vegan bread because I am allergic to dairy and eggs.
Here's what my BAT sandwich was made of (all the ingredients were purchased at Whole Foods):
- 2 slices of cooked Black Forest Bacon (bought fresh from the meat counter)
- 2 sliced heirloom tomatoes, one yellow, one dark red (get creative and pick some fun colors)
- Loose arugula, pea shoots, and cut red onion (got this from the salad bar)
- 1/2 of an avocado sliced into slivers
- 2 slices One Degree Organics Lentil Grain bread
- Whole Foods 365 Organic Vegan Mayo and Honey Mustard (I'm allergic to eggs thus the vegan mayo)
btw, this was my first time to try Whole Foods' 365 brand organic vegan mayo and I seriously could not believe it was vegan. It's one the best mayos of any kind of mayo I have ever tried. Even my mom did not know the difference. So, if you are not vegan but still want to cut down on animal products as part of being flexitarian, I highly recommend trying this mayo.
With my BAT sandwich, I got a side of curried pearled cous cous salad from the salad bar as well. The curry salad was a nice compliment to the heirloom tomatoes and arugula.
And yes, I ate the whole sandwich because it was SO good!
