I love summer burger bowls! What a fun way to get a bite of summer with no bread. I did a veggie burger bowl here. You can use any of your favorite pre-made veggie burgers. Some of my favorites include Hillary's, Amy's Kitchen, and Dr. Praeger's.
I placed my veggie burger on a bed of a mix of organic arugula and spinach.
The veggie burger is then topped with chopped organic heirloom tomatoes and avocado I got from the farmer's market along with some sauteed red onions and BBQ sauce. I sprinkled on some flax seeds for more protein.
The avocados were actually in a cosmetically challenged bin. These are great deals at farmers market. The food is still good, it just isn't "show" pretty.
