I was at Whole Foods Oakland the other day, and they had this vegan chicken verde made with Beyond Meat. Looks really meaty and is tasty! Couple with some brown rice and black beans for a filling meal.

These Herbed Crackers from Mariposa Baking are so crunchy and tasty, I could not believe they were gluten-free AND vegan plus nut and soy free. To me, these crackers are more like tiny crostini. I envision a vast array of gluten-free appetizers. These herbed crackers are awesome dipped in roasted red pepper hummus.

Here's an idea to jazz up a green leafy salad. Add freshly grated coconut shreds for a touch of sweet gluten-free, vegan, and soy-free topping.
On this salad, the coconut shreds look like bits of cheese. I enjoyed having a hint of sweetness on my salad. Coconut has healthy fats and is cholesterol-free.

Mall food courts are notorious for being fast food hubs which usually means lots of highly processed foods. But all is not lost. There are ways to find healthier options or minimize the nutritional overload. Here are some tips.
Nix the meal deal and order two things a la carte. Thing one will be either a burger or a burrito, and thing two will be unsweetened iced tea or a bottle of water. Lemonade or juice is not necessarily healthier than soda because it has as much as and sometimes even more sugar than soda.

Trying new foods at Trader Joe's is always a fun thing for me. I found these pre-made Vegetable Pakoras in the frozen food section.
These Pakoras are vegan, and from the looks of the ingredients list are soy and gluten-free. I say looks only because the box was not specifically labeled gluten-free. Pakoras are made with potatoes, onions, sweet potato, spinach, cilantro, chickpea flour, garlic and spices.
Pakoras are a popular Indian snack served at tea time. A serving of four of these TJ Pakoras is 150 calories which in my book makes for a nice snack. The Pakoras are lightly fried with 5g of fat per serving. There's zero trans fat.
I likedit!
I coupled my Pakoras snack with slices of avocado, and the Trader Joe's sweet chile sauce for a dip. The Pakoras come with a tamarind sauce, but I didn't like it at all. Plus, the Pakoras have a medium spicy heat to them, and so did the tamarind sauce which put together was too much heat for me. The sweet chile sauce mellows things out with cool sweetness.
